Plantain Flour

Our plantations are expanding and presently we are processing plantain flour. This is an opportunity for us to contribute in the fight against hunger and making our plantains feed families in and out of our region with little or no waste.

 

PLANTAIN FLOUR RECIPES

 

 

Plantain Fufu

Plantain Fufu is basically swallowed and made from unripe Plantains flour. This is a very healthy meal which is gluten-free, low sugar and generally recommended for diabetic patients.

Ingredients

500g of plantain flour

3/4 cup of hot water

1/4 cup of warm water

Method

  1. Boil some water in a kettle then transfer into a pot. Ensure that the pot is on fire so the water doesn’t stop boiling.
  2. In the boiling water, add in plantain flour while stiring (use a wooden spoon or whichever is easier for you). Keep stiring till the plantain flour mixes properly with the water and starts to solidify.
  3. Start to turn the dough and pull towards you continuously to avoid lumps. Keep doing this till the dough is smooth.
  4. Add in some water to the dough and allow it to cook for some minutes.
  5. Continue in a Stir- Gather- Pull motion, till your plantain fufu is fluffy and lump free.

How to serve

Serve with any soup of your choice. 

 

 

MPUH FISH

Mbuh fish is a traditional plantain flour (mpuh) meal that is consumed in Cameroon, particularly in the South West Region of the Country. You can use any fish, you like for this, and it will all work perfectly well. Be sure to salt the fish before placing in the plantain mixture.
